If you want to print to a 300 DPI printer, you would need 120 PPI for resampling images. 600 DPI needs 170 PPI. 1200 DPI needs 240 PPI. 2400 DPI needs 300 PPI. Therefore, 300 PPI is the default threshold, which is adequate for most printers (from 300 DPI for up to 2400 DPI printing resolution).

When somebody quotes a print resolution of 1200 x 600 DPI, one is the horizontal resolution and the other is the vertical. Most printers can vary their resolution, which is why the printer driver may give you alternatives like 720x720 or 720 x1420. Other drivers may simply give you High/Low resolution alternatives without quoting the actual DPI
A full bed 8.5x11.7 scan at 1600 DPI is 250MP. If you scan things at 1600 and scale down to 400 DPI you'll be working with 16MP files when cropping or editing which are much easier to handle. The hardware resolutions for a V600 are 6400, 3200, 1600, 800, and 400. A scan at 300 DPI is just a 400 DPI scan scaled down.
